Latheesha Abeywardana
Latheesha is a final-year PhD candidate at Deakin University with backgrounds in chemistry and materials engineering. Originally from Sri Lanka, her research focuses on the edible encapsulation of iron and vitamin A and the delivery of these micronutrients through extrusion-based 3D food printing. She develops biopolymer encapsulation systems and characterises their physicochemical stability, release behaviour, and processability for integration into printable food matrices. Her work aims to enable personalised, nutrient-fortified foods through advanced material design and sustainable food manufacturing technologies.
